>We had this simple BBQ Chicken Pizza for dinner last night and it was quite yummy! I served it with a side salad to complete this simple dinner.

Pizza Crust in the Bread Machine (that’s right … dust off those bread machines!)
~1 1/4 c. warm water
~3 T. olive oil
~1 t. salt
~4 c. flour (for whole wheat crust substitute 2 c. whole wheat + 2 c. white flour)
~2-3 t. yeast

-Measure first 4 ingredients into bread machine in order listed.
-Make well in center of flour.
-Add yeast into well.
-Set bread machine on “dough” cycle and run.
-When done, punch down and remove.
-Knead a few times to deflate dough.
-Let rest for 10-15 min.
-Press/roll onto pan(s).
*This recipe will make 1 thick crust or 2 thin crusts

BBQ Chicken Pizza
~Cooked boneless, skinless chicken breasts or tenderloins, cut into small pieces (leftover chicken works great too)
~BBQ sauce (enough to mix with chicken and to use as a sauce on the dough)
~Peppers, onions, etc. (or whatever toppings you like!)
~Moz. cheese

-Preheat oven to 425*
-Cook chicken if not cooked, then cut into small pieces.
-Mix chicken with favorite bbq sauce.
-Spread additional bbq sauce on prepared dough.
-Put peppers and onions on top of sauce.
-Bake @425* for 15 min., then remove from oven and add bbq chicken. Top with cheese, and bake an additional 5-10 min. until cheese is melted and crust is golden brown.
